How I Plan on Torturing Myself in the next few months

So the other day I was at a bazaar held by a local church. I was there to sell some goods for Relay for Life. Other members of my Relay for Life team were having a silent auction. They had some really awesome items up for bid. I bid on two items. First an Auburn National Champions football (for Hubby :)) and second two free weeks of Better Body Bootcamp. As you know back in August 2010 I started running to lose weight. I started out training for a 5k using the Couch to 5k program. Once I was done with that I moved on to the Bridge to 10k (6.1 miles) to keep myself motivated and to maintain my weight loss. When I saw the bootcamp item I thought it would be a neat and new challenge. I am currently waiting for the lady it told me to call to call me back and set it up. Hopefully I won’t kill myself! I have two 5k’s coming up and I’d like to be able to complete them without being in pain! I’ll keep you all updated on how it goes.

What was I thinking???????

Running and I feel like crap :(

Back in August I started the couch to 5k running program.

It’s a nine week program aimed at getting you off the couch and running. You start of simple and then progress as the weeks go on. It wasn’t to difficult and I completed the program in October. I ran my first 5k Oct 2010 and finished in 34:30ish minutes. I ran my second one Oct 30, 2010 and finished in 33:27. Yesterday I ran my third one and finished in 32:35. Also in Nov I started the Bridge to 10K program.
So far in conjunction with weight Watchers I have lost 39 pounds. I am 7 away from my goal. I have gone from a size 14/16 to an 8.

For the most part I have felt the best I have in a long time. However, apparently yesterday a sleeper cell was in my body and at approximately 2pm it attacked FULL F’ING force. it's not lupus - Stencil
I now have a sore throat and congestion like no other. OMG I feel AWFUL! Saturday morning my wonderful sis took the little one out of town for the weekend with her so I could run my race (hubby was out of town.) Thank GOD for that! I have no idea what I would have done if she hadn’t taken her. my family rocks today. They are keeping the little one a little longer today so I can recover. While I was recovering I made two pairs of PJs. One for my older sister, which didn’t turn out so great……., and one pair for myself. I am now curled up in my new PJs, in my bed watching the same episode of “Disappeared” for the 1000th time. There is NOTHING on tv 😦

Goat Cheese and Herb Stuffed Chicken Breast

Tonight for dinner I made this dish. It was incredibly delicious! This is definitely a “must do again.” The combination of the goat cheese with sun-dried tomatoes was a perfect pairing. The recipe calls for canned sun-dried tomatoes but I was only able to find a bag of them. This, in my opinion, worked well with the recipe anyways as you are instructed to wash and pat them dry anyways.

2 oz Goat Cheese

2 oil-packed sun-dried tomatoes, rinsed under water, patted dry, and finely chopped

1 scallion, chopped

1 tbsp chopped basil

2 tsp chopped thyme

1/4 c plain dry bread crumbs

4 (1/4lb) skinless boneless chicken breasts

4 tsp reduced calorie mayonnaise

1 1/2 lbs baby spinach, rinsed


1. Preheat oven to 425. Spray a nonstick baking pan with nonstick spray.

2. Combine the cheese, tomatoes, scallion, basil, and thyme in a bowl, mashing with a fork, until blended. Place the bread crumbs in a separate small bowl.


3. Cute a pocket into the side of each chicken breast about 2.5″ long. Place one-quarter of the goat cheese mixture inside each slit. Lightly press the pocket closed with a fork. Brush the top side of each breast with the mayo. Dip the chicken, one piece at a time, coated side down into the bread crumbs. Transfer coated-side up to the baking pan.Photobucket

4. Spray the tops of the chicken lightly with nonstick spray. Bake until the chicken cooks through and the crust is golden, about 25 minutes


5. Meanwhile, place the spinach in a large steamer basket set in a saucepan over 1″ of boiling water. Cover tightly and steam until the spinach just wilts, about 3 minutes. Transfer the spinach to the platter, then top with the chicken.

1 week of the 30 Day Shred

As of today I have been doing the 30 Day Shred for one week. Out of 7 days i worked out 5. So far I still like the work out video. It’s fast paced, gets you going, and you get a good sweat going. Some days it was tough to get myself motivated but I pushed through and did it! On Monday I started back with weight watchers and have stuck to it. As per my scale today I have lost 4 pounds! I’ve had many temptations flaunted in front of my face this week and it’s been difficult to stick with the diet. I’ve managed to dissuede these temptations using my voice. Saying no to those who tempt me with treats or try to get me to fudge on my work out. Sometimes it’s hard to do that with people you love but I remind myself that I have to have the strength to stand up to them if I want to reach my goals.
